Yummy Feta Chicken Salad

So it was one of those busy "stay at home mom" days where you realize it is 2:00 and your children have long since had lunch, but that rumbling in your tummy suggests that you forgot to feed yourself! I raided the fridge for a quick lunch and found a cooked chicken breast left over from a casserole that I only needed part of the chicken breasts for and several containers of feta cheese...(.67 cents each with last week's coupons!). What to make? Voila! This new "greek" chicken salad was born!

You will need: cubed, cooked chicken
mayo
feta cheese
celery seed
salt and pepper
fresh tomato, diced


**Combine all ingredients, using each item to your taste (I like alot of chicken and Feta, medium amount of mayo, sparingly on the celery seed and tomato and just a pich of salt and pepper!) Serve on toasted bread or with crackers! Yum! Next time I may add olives......

Pearl the Owl


I have been revam-ping Rylie's room and her new bedspread has cute little owls on it, so it inspired me to make this cutie. I drew up a pattern on printer paper and stitched away! Here is the finished project. Rylie calls her Pearl:)

Lamp Makeover

We did a little mini-makeover in Rylie's room and this lamp was one of the projects. I had pink and green fringe around the bottom and I removed it and needed to make it purple.
First, I randomly placed round stickers I had left over from a garage sale on the lamp shade.

After some brain storming and a quick trip to Hobby Lobby, I gathered these supplies: purple and white paint, and some purple feathers along with paint brushes and of course my trusty hot glue gun.
I painted over the label stickers......


....removed the stickers and voila! A purple polka dotted lamp. This method is not without imperfections, so I used the white paint to quickly go over the dots....

After applying the purple feather boa with the hot glue gun and trimming to fit, here is the finished product! Rylie loves it and it matches her new bedspread. I still have a few finishing touches before posting before and afters of her room...

Emily's Test Kitchen

ok...I am going to try to have some regular segments...as much as a mommy of a 3month old and a toddler can! I will test recipes and let you know how they fare! I like EASY and YUMMY things...so I will pass them along to you busy mommies out there!

Chicken Enchiladas

6 chicken breasts (boiled 20 min.; keep 2 cups of broth) 1/2 cup sour cream
2 cups canned chicken broth (or make it out of bouillon) 1 tablespoon flour
8 burrito sized tortillas 1/2 stick butter
8 tablespoons picante sauce 4 oz. grated jack cheese
1/2cup tightly packed cilantro 4 oz. grated cheddar cheese
1 teaspoon cumin 1 can black beans

In blender combine cumin, cilantro, sour cream, 1 cup canned chicken broth, and 1 cup reserved chicken broth. In skillet or saucepan, heat butter slowly and add flour until smooth. Slowly add 2 remaining cups of broth until smooth (may add more flour to thicken). Add to blender. Spoon chicken picante sauce and black beans into tortillas and roll. Place in 9x13 pan seam side down. Fill pan with blender sauce, covering enchiladas. Sprinkle cheeses on top. Bake at 350 uncovered for 30 minutes.

Make a kid's table out of a small coffee table!


Here is the "Before".....It is a small coffe table that I purchased for $2.00 at a garage sale. (The box on top of it I snagged for $1.00....not sure what I am going to use it for, I just liked its character!)
Here is my 3 yr old with the finished product! I painted the table, leaving a little black peeking through for the distressed look. Those of you with little ones know it is going to be distressed one way or the other! Then I cut scapbook pages in various sizes to fit and used Mod Podge to adhere the pieces. (the toughest part is getting all the bubbles out!) Then I applied a few additional coats of Mod Podge over the paper and topped it off with 2 coats of clear spray acrylic. Voila! An "anthropologie" inspired table for my princess! She has already used it for crafting:)
The best part....TOTAL COST: around $6.50! (I already had Mod Podge so I am not counting that)

Yummy Summer Recipe!!


Paula Deen’s Tomato Pie

4 tomatoes, peeled and sliced
1 cup grated mozzarella
10 fresh basil leaves, chopped
1 cup grated cheddar
1/2 cup chopped green onion
1 cup mayo
1(9-inch) prebaked deep dish pie shell
Salt and pepper

Preheat oven to 350 degrees F.Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.. To serve, cut into slices and serve warm.
