Emily's Test Kitchen

ok...I am going to try to have some regular segments...as much as a mommy of a 3month old and a toddler can! I will test recipes and let you know how they fare! I like EASY and YUMMY things...so I will pass them along to you busy mommies out there!

Chicken Enchiladas

6 chicken breasts (boiled 20 min.; keep 2 cups of broth) 1/2 cup sour cream
2 cups canned chicken broth (or make it out of bouillon) 1 tablespoon flour
8 burrito sized tortillas 1/2 stick butter
8 tablespoons picante sauce 4 oz. grated jack cheese
1/2cup tightly packed cilantro 4 oz. grated cheddar cheese
1 teaspoon cumin 1 can black beans

In blender combine cumin, cilantro, sour cream, 1 cup canned chicken broth, and 1 cup reserved chicken broth. In skillet or saucepan, heat butter slowly and add flour until smooth. Slowly add 2 remaining cups of broth until smooth (may add more flour to thicken). Add to blender. Spoon chicken picante sauce and black beans into tortillas and roll. Place in 9x13 pan seam side down. Fill pan with blender sauce, covering enchiladas. Sprinkle cheeses on top. Bake at 350 uncovered for 30 minutes.

Make a kid's table out of a small coffee table!


Here is the "Before".....It is a small coffe table that I purchased for $2.00 at a garage sale. (The box on top of it I snagged for $1.00....not sure what I am going to use it for, I just liked its character!)
Here is my 3 yr old with the finished product! I painted the table, leaving a little black peeking through for the distressed look. Those of you with little ones know it is going to be distressed one way or the other! Then I cut scapbook pages in various sizes to fit and used Mod Podge to adhere the pieces. (the toughest part is getting all the bubbles out!) Then I applied a few additional coats of Mod Podge over the paper and topped it off with 2 coats of clear spray acrylic. Voila! An "anthropologie" inspired table for my princess! She has already used it for crafting:)
The best part....TOTAL COST: around $6.50! (I already had Mod Podge so I am not counting that)

Yummy Summer Recipe!!


Paula Deen’s Tomato Pie

4 tomatoes, peeled and sliced
1 cup grated mozzarella
10 fresh basil leaves, chopped
1 cup grated cheddar
1/2 cup chopped green onion
1 cup mayo
1(9-inch) prebaked deep dish pie shell
Salt and pepper

Preheat oven to 350 degrees F.Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.. To serve, cut into slices and serve warm.

Cute Coaster Project


I am all for super easy and super cute crafts! This one is a breeze and you can get almost all the supplies you need at Hobby Lobby! (I picked up the spray acrylic at Lowe's). These make awesome gifts....think teachers, daycare workers, etc! Happy Crafting:)
